When you are craving pizza, but you don’t have the flour or yeast, or if you just want to have some fun for dinner, try making pizza using pancake mix. Let us start with the basic pizza crust mix.
2 cups of complete pancake mix
1/2 cup of water
1/4 cup olive oil
A bit more olive oil or cooking spray to grease the pizza pan
A sprinkle of flour or additional pancake mix to dust your kneading surface
Preheat your oven to 425 degrees F. Lightly grease your round pizza pan, cookie sheet, or jelly roll pan with cooking spray or a little bit of olive oil.
Combine the pancake mix, the water and the olive oil in a large bowl. A stainless steel or glass bowl works best. You can use a fork, whisk or spoon to mix.
Next, sprinkle a little flour or pancake mix on your clean, dry, counter or kneading surface.
Turn your dough out of the bowl and knead it for just a minute or two.
Cover the dough with a clean, slightly damp dishcloth, and allow the dough to sit for five minutes, undisturbed.
Now it is time to make your crust. Shape the dough into a flat circle or square and place it on your pan. It make look slightly lumpy, but that is okay.
Bake your crust for ten minutes or until it just starts getting brown. Don’t over bake it.
Remove the crust from the oven, add your sauce, cheese and other favorite toppings. Bake the pizza for an additional 15 minutes, or until the cheese is melted and the crust is a golden brown.
