Maggie’s Mug Breakfast, a new Recipe from eFoods!

In the autumn as the temperature cools and life gets more hectic, my kids get hungrier.  It’s hard to find time to make a nutritious meal, so here’s a delicious, quick breakfast you can make the night before using eFoods Almond Coconut Granola. (It is toasted with clusters of almonds and whole grain oats and offers 5 grams of dietary fiber.)

Sprinkle a layer of eFoods Almond Coconut Granola onto the bottom of a glass pan. Drop fresh or frozen berries (i.e., raspberries, blueberries and/or blackberries) as you like on top of the granola.  Spread the layers with yogurt (I like plain but some prefer vanilla) so that the berries and granola are covered. Cover with plastic and store overnight. In the morning, scoop out mixture into a portable mug with a plastic spoon and hand it to the kids as they head out the door. Just make sure to get the mug back!
