Three Bean Vinaigrette

This is a nutritious and tasty salad your family will love. The beans and rice in this recipe, when eaten together, make up a complete protien.


Three Bean Vinaigrette

Ingredients:

  • 2 (15 oz.) cans of three bean salad
  • 3 cups cooked rice
  • 1 (15 oz.) can of kidney beans, drained and rinsed
  • 1 (6 oz.) can of marinated artichoke hearts, drained
  • 1 teaspoon cracked black pepper
  • 1/2 teaspoon salt
  • Lettuce leaves

Drain cans of three-bean salad, reserving the liquid from 1 can; discard remainder. Combine beans, reserved liquid, rice, kidney beans, artichoke hearts, pepper and salt in a large bowl. Toss and chill. Serve over lettuce leaves.
