Beefy Barley Soup

Cooking home-made soup from scratch sounds more difficult and time consuming than it actually is. Try this recipe for Beefy Barley Soup and you may never want to buy another can of soup from the store.
Beefy Barley Soup (serves 6)
Ingredients:
- 1/2 pound ground beef, cooked and drained
- 10 cups water
- 4 teaspoons beef bouillon granules
- 1/2 cup dried barley
- 4 tablespoons dried chopped onion
- 4 tablespoons dried chopped carrots
- 4 tablespoons dried chopped celery
- 2 teaspoons dried oregano
- 2 teaspoons dried parsley
- 1 bay leaf
- salt and pepper to taste
In a medium saucepan bring the water and bouillon granules to a boil. Add remaining ingredients. Return to a boil. Lower temperature and simmer for about 3 hours or until barley is tender. Add a little more water if necessary. Add salt and pepper to taste.
