Pinto Bean Spice Cake

You and your family will love this cake! Perhaps you didn’t know pinto beans were so versatile but you will be delighted to discover how delicious they are in this recipe.
Pinto Bean Spice Cake - page 1 of 2
Ingredients:
- 1 cup sugar
- 1/2 butter or reconstituted butter powder
- 2 beaten eggs or 5 tablespoons of dried egg powder mixed with 5 tablespoons of water
- 1 cup cooked pinto beans, mashed
- 2 cups flour
- 1/4 teaspoon of salt
- 1/2 cup diced raw apple or reconstituted dried apples
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon

- 1/2 teaspoon cloves
- 1/2 cup raisins
- 1/2 cup nuts
Cream shortening, sugar and eggs together. Mash the beans and add them to the creamed mixture. Sift dry ingredients and add fruits and nuts. Bake in greased loaf pan 40–45 minutes at 350°F.
