Scrambled Whole Eggs

Scrambled eggs made from dried whole egg powder taste every bit as good as if they are made from fresh eggs. Your family will love these eggs and the variations make them even better.
Scrambled Whole Eggs using dried whole egg powder (6 eggs) - page 1 of 2
Ingredients:
- 1 cup dried whole eggs
- 2 tablespoons dry milk
- 1/2 tablespoon salt
- 1 1/2 cups water
Sprinkle dried egg over the water and beat to blend. Add salt, dry milk, and mix. Melt some margarine in a frying pan. Cook over low heat, stirring continuously until dry and crumbly. For flavor add TVP bacon bits.

Variations of Scrambled Egg Recipe - page 2 of 2
- Add chopped green chilies and 1/2 teaspoon dried cheese powder stirred into 1/4 teaspoon water. Sprinkle cheese and chili onto egg just before set.
- Add 1/2 teaspoon bacon bits before egg is set.
- Add re-hydrated bell peppers, and 1/2 teaspoon dried minced onions. Cook as souffle.
- Add chicken chunks just before cooking.
- In a saucepan add 1/4 cup dried tomatoes, 1/2 teaspoon dried green bell pepper, 1/2 teaspoon minced onion in 2/3 cup water. Cook until tender. Add 1/2 teaspoon sugar, 1/4 teaspoon salt. Season and serve over scrambled eggs.
