- 2 cups eFoodsDirect Mashed Potatoes (prepare according to pkg. directions)
- 1-cup broccoli
- 1 cup sliced carrots
- 2 cups cheddar cheese-freshly grated
- 1-cup butter
- 1 cup chopped white onion
- 1 tsp. salt
- 1 tsp ground black pepper
- 1 cup low-fat sour cream
Preheat oven to 350 degrees.
Lightly grease a medium casserole dish. Cook mashed potatoes according to package directions. Cook broccoli and carrots 5 minutes in boiling water. In a large bowl, mix potatoes, broccoli, 1 cup cheese, onion, sour cream, salt, pepper and butter. Transfer to the casserole dish. Top with remaining Cheddar cheese. Bake 20 minutes in oven until golden brown.
