  • 2 cups eFoodsDirect Mashed Potatoes (prepare according to pkg. directions)
  • 1-cup broccoli
  • 1 cup sliced carrots
  • 2 cups cheddar cheese-freshly grated
  • 1-cup butter
  • 1 cup chopped white onion
  • 1 tsp. salt
  • 1 tsp ground black pepper
  • 1 cup low-fat sour cream

Cooking Directions

Preheat oven to 350 degrees.

Lightly grease a medium casserole dish. Cook mashed potatoes according to package directions. Cook broccoli and carrots 5 minutes in boiling water. In a large bowl, mix potatoes, broccoli, 1 cup cheese, onion, sour cream, salt, pepper and butter. Transfer to the casserole dish. Top with remaining Cheddar cheese. Bake 20 minutes in oven until golden brown.

Cooking Time: 30 minutes; Makes 6 Servings
