- 2 cups eFoodsDirect Mashed Potatoes (prepare according to pkg. directions)
- 2 tbsp. sea salt
- 1 lb bacon-diced
- 1 cup chopped scallions
- 1-cup cream cheese
- 1-cup sour cream
- 1-cup blue cheese
- 1-cup butter
- 4 tsp. minced garlic
- 1 tbsp. salt
- 1 tsp. ground black paper
- 1 lb large Scallops
- 2 tbsp. fresh chopped parsley
Prepare potatoes according to package directions. Cook and stir bacon in a skillet over medium-high heat until crispy about 7-10 minutes. Remove bacon with a spoon to a plate lined with paper towel to drain. Drain, and keep 2 tablespoons oil from bacon in the pan. Return pan to medium-high heat. Stir scallions in reserved drippings 2 to 3 minutes.
Combine the cream cheese, sour cream, blue cheese, butter, and garlic in a large bowl. Pile the potatoes on top of the cream cheese mixture. Beat with a hand mixer to desired consistency. Season with sea salt and black pepper. Set aside. Sauté scallops in butter for 3-5 minutes. Sprinkle with salt. Transfer potatoes to a serving platter. Sprinkle parsley and bacon over the potatoes to serve. Add scallops on the side.
