  • 2 cups eFoods Direct Mashed Potatoes (prepare according to pkg. directions)
  • 6 hot links-cooked and sliced
  • 1 cup onion-chopped
  • 1-cup butter
  • 1 cup grated cheddar cheese
  • 1 tsp. salt
  • 1 tsp. pepper
  • Cooking spray
  • 1-cup fresh parsley

Cooking Directions

Preheat an oven to 350 degrees. Spray 2 qt. baking dish.

Prepare mashed potatoes according to package directions. Place sliced hot links in a large pan and cook over medium high-heat for about 10 minutes, stirring occasionally. Drain the hot link slices on a paper towel-lined plate, and set aside. Place chopped onion in the pan, cook and stir over medium-low heat until the onion has softened. Remove onion.

Stir hot links, 1/2 cup of shredded Cheddar cheese, salt, and pepper into the potato mixture and mix thoroughly. Spoon mixture into the prepared baking dish, drizzle with butter, and sprinkle with remaining Cheddar cheese. Garnish top with parsley for color, and bake, uncovered, in oven for 30 minutes, until the top begins to brown and the cheese is melted and bubbling.

Cooking Time: 30 minutes; Makes 4 Servings
