  • 2 cups eFoods Direct Green Beans (prepare according to directions)
  • 1 cup grape tomatoes
  • 1 cup thinly sliced red onion
  • 2 tbsp. lemon juice
  • 1 tbsp. olive oil
  • 1 tsp. pepper
  • 1 tsp. salt
  • 4-6 oz salmon fillets
  • 1/2-cup butter

Cooking Instructions

Preheat oven 375 degrees.

Use 8, 8-inch sheets of aluminum foil (double for each packet). Combine tomatoes, red onion, green beans, olive oil, 1/4 teaspoon of salt and 1/4 teaspoon of pepper in a large bowl. Place one portion of salmon in the center of the foil. Sprinkle with some of the remaining 1/4-teaspoon salt and pepper, then top with about 3/4 cup of the vegetable mixture. Drizzle with butter.

Bring the ends of the foil together, leaving enough room in the packet for steam to gather and cook the food. Fold the foil over and pinch to seal. Make sure all the seams are tightly sealed to keep steam from escaping.

Repeat with more foil, butter and the remaining fish, salt, pepper and vegetables.

Bake packets in oven for 15 minutes until the fish is cooked through and the vegetables are just tender. Carefully open both ends of the packets and allow the steam to escape. Use a spatula to slide the contents onto plates. Drizzle lemon juice over salmon & veggies.

Cooking Time: 30 minutes; Makes 4 Servings.
