- 2 cups eFoodsDirect Chicken Noodle Soup (prepare according to directions)
- 1-cup portabella mushrooms-sliced
- 1/2 cup minced garlic
- 1-cup red onion-diced
- 1 Tbsp. canola oil
- 1 cup chopped fresh parsley
- 8 cups chicken broth
- 1 tsp. salt
- 1 tsp. Ground black pepper
- 1/2-cup rice
Pour oil in a large stockpot. Over medium heat, sauté garlic, onion, and mushrooms for 5-7 minutes, then pour in the chicken broth.
Bring to a boil and simmer for 10 minutes, until the vegetables are nearly cooked. Add rice and simmer for another 15 minutes. Serve hot.
Cooking Time: 30 minutes; Makes 4 Servings.
