- 1-cup eFoodsDirect Bananas (prepare according to directions)
- 1/2 cup melted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1-teaspoon baking soda
- 1-teaspoon salt
- 1/2-cup sour cream
- 1-teaspoon vanilla
- 1/2 cup chopped walnuts
Preheat oven to 350 degrees. Butter a 9 x 8”loaf pan; set aside. Use a mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
In a medium bowl, whisk together flour, baking soda, and salt. Add to butter mixture, and blend until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in walnut nuts, and pour into loaf pan.
Bake about 1 hour 10 minutes. Until a thin knife can be inserted into the center of the cake and it comes out clean. Rest in pan for 10 minutes, then place on a rack to cool.
Cooking Time: 1 hour 30 minutes; Makes 6 Servings.
